Food has transformed Copenhagen in just over a decade. Between my first visit — to write about René and Nadine Redzepi, who made this incredible walnut cake with a 13-week-old on her hip — until today, not only has the number of world-beating restaurants, natural wine bars, bakeries and coffee bars exploded, but the attention (and gastronauts) they have attracted has literally expanded the city. During each trip, a reservation or pastry recon has led me to a newly built or new-to-me neighborhood. Of course, many of the chefs behind them came out of Noma, meaning the quality is exceptional, the creativity is high and the design is inspiring. By no means extensive, this is the short(ish) list I give friends. And if I haven’t been to one of these places in recent visits, it’s still on because friends I sent loved it.
